One thing I like about winter time out in Imperial County. Farmers out there are planing onion. I like to grab some and put it in my smoker. Smoke baby onion are very sweet and yummy.
I brine chicken in salt and sugar brine solution over night. Then rinse off access brine and lightly cover with olive oil & smoke seasonings.
In the bullet smoker @ 250, for 3 to 4 hours........Yummy.....
