Pork loin for OAT

                here is a pork loin i did 2 weekends ago. Rub is simple, lawrys, kosher salt, cracked pepper, paprika, onion and garlic powder, brown sugar and rosemary. I rub it up good and let sit out for about an hour to come to room temp. then wrap in bacon as pork loing has little fat on it. Cooked for 3 hours at 225-250 then foil wrapped tight for another 45 mins. pulled off grill at 140 degrees and let sit in foil then I had perfection

Oat I have to say it was the best cooked piece of pork I have ever done. I am reallyu wanting to try a brisket soon though too. yours looked incredible

Brisket are tricky, took me three try to get it to turn out. I'm getting craving for some brisket sandwich just about now.
