Drink beer, get it smokey, throw onion on the briquettes. Cut 2 or 3 onions into 1/4 inch circles. Lay the down on top the briquettes threw out the pit. Let the heat take the onion and smoke it into the meat. Get a good rub, I make my own. Talk to the guys you buy it from, some times its to much and will make the meet salty. Good luck
