Had a buddy that just came back from Northern California and score his limit of stocker rainbow trout, two deer, and a bear. Got the bear steak in the food for hunters section.

Ceviche is very easy to make. There are many ways you can make it, but this is how I made my.

First you will need fresh caught rainbow trout. Most fish will do also.

Fillet the fish and remove all bones, and blood line.

Cut boneless trout fillet in to tiny cube and let sit in lime juice for 20 minutes. Make sure you put it in refrigerator while waiting.

Here're all the ingredient. Chopped it all up and add to the trout. Also add some garlic sait, pepper, hot sauce. Do it up to taste.

And there you have it. Fresh rainbow trout ceviche. Go really good with chips, and of course iced cold beer .......
