Best part of going hunting is to use what you harvest.  Wild waterfowl is very lean, most people will tell you duck are fatty but this is not the case. Some people will say duck are gamey, and tough. But if cook right they are tender and delicious. Here is one way I like to cook my. Thin slice and marinade with black pepper, soy sauce, onion powder, rosemary, honey, and a touch of Indian curry powder for 30 minutes. Then stirfry in a hot pan with any fresh vegetables of your choice. I like using lots of garlic and onion in my cooking so those are usually my main ingredients. Try it for your self if you don't believe me....
