If you all wonder how the smoke turn out. Well I screw it up this time, usually I brine and smoke with skin on. This time I cut off skin and cut in small piece just to try it out. Turn out super salty... Hopefully better next time.
that sucks just ad some sause and eat anyways, right, and wash down with a beer...
You read my mind Mikey, that's what I did. Made a sweet sauce with honey, brown sugar, and water. Coated the fish and it seem ok after it cooled off in fridge.
