Do they taste good when they are that big?
It's like everything, how you prepare it. Ds Dave sam said he had one big and only put it in the bag to be a possible JP winner. He said the meat was like mush. Others say its poor mans lobster... So, it's what you prefer...
I keep hearing this about shitheads (sheepshead), that they are no good to eat. I can only guess that the fish was not properly handled if it was mushy. Some of the firmest meat I can think of, even on the big ones. This is not a fish you would want to BBQ (like ling god or salmon grouper). This is white meat that makes excellent ceviche, fish-n-chips or fried fish tacos. My Mom (RIP) would whole deep fry them (head and all, no guts) and serve it as a center piece for a Japanese meal called "Dragon Fish." One of my favorites, and best with whole shithead. When I keep a batch of fish for a fish taco meal, and mix bass, shithead and rockfish fillets, nobody can tell the difference between each species. So I say to those who don't like it, just let them go, or give it to me.
